Rosemary Garlic Salmon with Lemon Pepper Asparagus

This is one of our go to meals every week.  It is healthy, clean, gluten free and super quick.  I often make this for my lunch or dinner.  I know…I know…the kids won’t eat the salmon….no problem.  I usually add a different protein on the baking sheet for them (e.g. thin boneless chicken breast or venison sausage).  You can even substitute the veggies or add to the asparagus if you want.

This is also a great date-night at home entree you and your significant other can make together and enjoy over a glass of wine or scotch.  Salmon pairs nicely with a variety of wines, mainly depending on the type of salmon and how it is prepared.  To learn more, check out the details at Decanter article on this. Keep it simple and try a chilled pinot noir or a sauvignon blanc.  Our favorites are Meomi Pinot Noir or Kim Crawford Sauvignon Blanc, which both can be found at major grocers or wine + liquor stores.

Ingredients

Atlantic Salmon {or other protein meat}

1 Bunch of Asparagus

EVOO {Extra Virgin Olive Oil}

Epicure’s Rosemary Garlic Seasoning

Simply Organic Lemon Pepper Seasoning

Pink Himalayan Salt

Ground Black Pepper

Lemon for Garnish or Extra Squeeze of Juice {optional}

 

Step x Step Directions: 

  1. Preheat 400 degrees
  2. Drizzle Olive Oil on Baking Sheet
  3. Wash Asparagus and Break/Snap the Asparagus
  4. Place Salmon Pieces face down first then immediately lay skin side down. This helps coat the fish with the extra virgin olive oil.
  5. Drizzle the Extra Virgin Olive Oil over the fish {lightly)}and the Asparagus
  6. Season the Salmon with Epicure Rosemary Garlic, Salt + Pepper
  7. Season the Asparagus with the Salt + Lemon Pepper
  8. Place in the Oven for 15 minutes

 

Visual Instructions

Step One: Pre-heat oven to 400 degrees and coat the salmon and asparagus with extra virgin olive oil. Tip: Grab the bunch of the asparagus and snap the ends off rather than cutting them with kitchen shears.  They will naturally break where they need to break.

Step Two: Season the Asparagus with Simply Organic Lemon Pepper + Salt and the Salmon with Rosemary Garlic Seasoning + Salt and Pepper.

Final Step: Place in the oven for 15 minutes and then enjoy!
